Slow Cooker Shredded Beef with Onion Gravy
๐ Ingredients (Serves 6โ8)
For the beef:

1.5โ2 kg (3โ4 lbs) beef chuck roast or brisket

2 tbsp olive oil
-
2 large onions, thinly sliced
-
4 cloves garlic, minced
-
2 cups (480 ml) beef broth
-
1 cup (240 ml) barbecue sauce or ยฝ cup BBQ + ยฝ cup tomato sauce

2 tbsp Worcestershire sauce
-
2 tbsp brown sugar
-
1 tbsp Dijon mustard (optional)
-
1 tsp smoked paprika
-
1 tsp dried thyme
-
ยฝ tsp black pepper
-
1 tsp salt (adjust to taste)
Optional for thicker gravy:

1โ2 tbsp cornstarch + 2 tbsp cold water (slurry)
๐ฉโ๐ณ Instructions
1๏ธโฃ Season & Sear (Important for flavor!)

Pat the beef dry with paper towels.

Season generously with salt and pepper.

Heat olive oil in a large pan over medium-high heat.

Sear the beef 3โ4 minutes per side until browned.

Transfer to slow cooker.
2๏ธโฃ Build the Flavor Base

In the same pan, sautรฉ onions 5โ7 minutes until soft and lightly caramelized.

Add garlic and cook 30 seconds.

Pour in a splash of broth to deglaze the pan (scrape brown bits).

Transfer everything to the slow cooker.
3๏ธโฃ Add Liquids & Cook

Add remaining broth, BBQ sauce, Worcestershire, brown sugar, mustard, paprika, and thyme.

Cover and cook:

Low: 8โ10 hours
-
High: 5โ6 hours
-
Beef should be fork-tender and easily shreddable.
4๏ธโฃ Shred the Beef

Remove beef from slow cooker.

Shred using two forks.
-
Return shredded meat to the sauce.
5๏ธโฃ Thicken (Optional)
If sauce is too thin:

Mix cornstarch + cold water.

Stir into slow cooker.

Cook on High 20โ30 minutes until thickened.
