Lemon Herb Shrimp and Veggie Skillet

🛒 Ingredients

Shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp smoked paprika (optional)

  • Zest of 1 lemon

Vegetables

  • 1 small zucchini, sliced

  • 1 red bell pepper, sliced

  • 1 cup broccoli florets

  • 1 small carrot, thinly sliced

  • 1 tbsp olive oil

  • Salt and pepper to taste

Herbs & Flavor

  • 1 tsp dried oregano or Italian seasoning

  • 1 tbsp fresh parsley, chopped (optional for garnish)

  • Juice of 1 lemon


👩‍🍳 Instructions

1️⃣ Prepare Vegetables

  1. Wash and slice all vegetables.

  2. Heat 1 tbsp olive oil in a large skillet over medium heat.

  3. Add broccoli, carrot, zucchini, and bell pepper.

  4. Season with salt, pepper, and oregano.

  5. Sauté 5–6 minutes until vegetables are tender-crisp. Remove from skillet and set aside.


2️⃣ Cook Shrimp

  1. In the same skillet, add 1 tbsp olive oil.

  2. Add garlic and sauté 30 seconds until fragrant.

  3. Add shrimp, season with salt, pepper, smoked paprika, and lemon zest.

  4. Cook 2–3 minutes per side until shrimp turn pink and opaque.


3️⃣ Combine & Finish

  1. Return vegetables to the skillet with shrimp.

  2. Squeeze lemon juice over everything and toss gently to combine.

  3. Taste and adjust seasoning if needed.


4️⃣ Serve

  • Serve hot, garnished with chopped parsley.

  • Great with rice, quinoa, pasta, or crusty bread.


🔥 Tips

  • For extra flavor, marinate shrimp for 10–15 minutes in olive oil, garlic, and lemon juice before cooking.

  • Don’t overcook shrimp — they cook very quickly.

  • You can use any combination of vegetables you like, such as asparagus, mushrooms, or spinach.

  • Add red pepper flakes for a spicy kick.


🥗 Optional Variations

  • Creamy version: Stir in 2 tbsp of cream or coconut milk at the end.

  • Garlic butter shrimp: Use butter instead of olive oil for richer flavor.

  • Mediterranean twist: Add cherry tomatoes, olives, and feta cheese before serving.
