    This crustless quiche is light, creamy, and packed with anti-inflammatory goodness. Cottage cheese adds high-quality protein and calcium, while spinach delivers antioxidants and magnesium. With no crust, it’s naturally gluten-free, low-carb, and perfect for an anti-inflammatory lifestyle.

    Ingredients

    • 1 cup cottage cheese (full-fat or low-fat, unsweetened)

    • 3 large eggs

    • 1½ cups fresh spinach, finely chopped

    • ¼ cup onion, finely chopped

    • 1 clove garlic, minced

    • ¼ cup olive oil (extra-virgin)

    • ½ tsp turmeric powder

    • ¼ tsp black pepper

    • ½ tsp dried oregano or thyme

    • Salt to taste

    Instructions

    1. Preheat oven to 180°C (350°F). Lightly grease a small baking dish with olive oil.

    2. In a bowl, whisk eggs until fluffy.

    3. Add cottage cheese and mix until mostly smooth.

    4. Stir in spinach, onion, garlic, olive oil, turmeric, black pepper, herbs, and salt.

    5. Pour mixture into the prepared baking dish.

    6. Sprinkle cheese on top if using.

    7. Bake for 30–35 minutes, or until the center is set and the top is lightly golden.

    8. Rest for 5–10 minutes before slicing.
