    Crispy Waffle Chicken Salad Sandwich

    This sandwich features golden savory waffles instead of bread, filled with creamy chicken salad, fresh lettuce, and pickles. Perfect for brunch, lunch, or a creative dinner!


    📝 Ingredients (Serves 2)

    🧇 For the Savory Waffles:

    • 1 cup all-purpose flour

    • 1 tsp baking powder

    • ¼ tsp salt

    • ¼ tsp black pepper

    • 1 egg

    • ¾ cup milk

    • 2 tbsp melted butter or oil

    • ¼ cup shredded cheddar (optional, for savory flavor)


    🥗 For the Chicken Salad Filling:

    • 2 cups cooked chicken breast, shredded

    • ¼ cup mayonnaise

    • 2 tbsp plain Greek yogurt (optional for lighter version)

    • 1 tbsp Dijon mustard

    • 1 tbsp lemon juice

    • 2 tbsp finely chopped red onion

    • 1 tbsp chopped celery (optional, for crunch)

    • Salt & black pepper to taste


    🥬 For Assembly:

    • Lettuce leaves

    • Sliced pickles

    • Tomato slices (optional)


    🔪 Instructions

    1️⃣ Make the Waffles

    1. Preheat waffle maker.

    2. In a bowl, whisk flour, baking powder, salt, and pepper.

    3. In another bowl, whisk egg, milk, and melted butter.

    4. Combine wet and dry ingredients. Mix until smooth (do not overmix).

    5. Fold in cheddar if using.

    6. Cook in waffle maker until golden and crispy.

    7. Cool slightly before assembling.


    2️⃣ Prepare the Chicken Salad

    1. In a mixing bowl, combine shredded chicken, mayonnaise, and yogurt.

    2. Add Dijon mustard and lemon juice.

    3. Mix in red onion and celery.

    4. Season with salt and pepper.

    5. Chill 20 minutes for best flavor (optional).


    3️⃣ Assemble the Sandwich

    1. Place one waffle on a plate.

    2. Add lettuce leaves.

    3. Spread a thick layer of chicken salad.

    4. Add pickles and tomato slices.

    5. Top with another waffle.

    6. Press gently and serve.
