    This Detox Green Chicken Quinoa Soup is a light yet deeply nourishing meal designed to cleanse, restore, and energize the body. Lean chicken, protein-rich quinoa, and immune-boosting mushrooms simmer in a soothing green broth infused with a vibrant fresh herb paste. Packed with antioxidants, anti-inflammatory ingredients, and clean protein, this soup is perfect for detox days, recovery meals, or anytime you want something comforting without heaviness.


    🛒 Ingredients

    🍗 Soup Base

    • 1 tbsp olive oil or avocado oil

    • 1 small onion, finely chopped

    • 3 cloves garlic, minced

    • 1 tbsp fresh ginger, grated

    • 6 cups low-sodium chicken broth

    • 1 cup cooked chicken breast, shredded (or raw diced chicken)

    • ½ cup quinoa, rinsed well

    • 1½ cups mushrooms (button, shiitake, or cremini), sliced

    • 1 cup spinach or kale, chopped

    • Salt to taste

    • ½ tsp black pepper


    🌿 Fresh Green Herb Paste

    • 1 cup fresh coriander (cilantro)

    • ½ cup fresh parsley

    • 2 tbsp fresh mint (optional but refreshing)

    • 1 green chili (optional)

    • 1 tbsp lemon juice

    • 1 tbsp olive oil

    • 2–3 tbsp water (as needed)

    Blend all ingredients into a smooth paste.


    👩‍🍳 Instructions

    1️⃣ Prepare the Soup Base

    1. Heat olive oil in a large pot over medium heat.

    2. Add onion and sauté for 2–3 minutes until soft.

    3. Add garlic and ginger, cook 30 seconds until fragrant.


    2️⃣ Build the Soup

    1. Pour in chicken broth and bring to a gentle boil.

    2. Add quinoa and mushrooms.

    3. Simmer uncovered for 12–15 minutes until quinoa is cooked.

    4. Add chicken and cook 5 minutes (if using cooked chicken) or until chicken is fully done.


    3️⃣ Add Greens & Herb Paste

    1. Stir in spinach or kale and cook 1–2 minutes until wilted.

    2. Add fresh green herb paste and stir well.

    3. Simmer on low heat for 3–5 minutes to infuse flavor.

    4. Season with salt and black pepper.


    4️⃣ Serve

    • Serve hot with lemon wedges

    • Garnish with fresh herbs if desired
