2 bay leaves

3 medium potatoes, peeled and cubed

1️⃣ Season & Sear the Beef (Key to Flavor)

Pat beef dry with paper towels.

Season with salt and pepper.

Toss lightly in flour (this helps thicken the stew).

Heat oil in a large heavy pot or Dutch oven over medium-high heat.

Sear beef in batches (do not overcrowd) until browned on all sides.

Remove and set aside.
