    Grilled Steak Bites with Creamy Garlic Pepper Sauce

    📝 Ingredients

    🔹 For the Steak Bites:

    • 1½ lbs (700g) sirloin steak (or ribeye), cut into 1–1½ inch cubes

    • 2 tbsp olive oil

    • 4 cloves garlic, minced

    • 1 tsp salt

    • 1 tsp black pepper

    • 1 tsp smoked paprika

    • ½ tsp chili flakes (optional)

    • 1 tbsp Worcestershire sauce

    • 1 tbsp soy sauce

    • 1 tbsp fresh chopped parsley (for garnish)


    🔹 For the Creamy Garlic Pepper Sauce:

    • 2 tbsp butter

    • 3 cloves garlic, minced

    • 1 cup heavy cream

    • ½ cup beef broth

    • ½ tsp cracked black pepper

    • ½ tsp Dijon mustard

    • ¼ tsp salt (adjust to taste)

    • ¼ cup grated Parmesan cheese

    • 1 tsp lemon juice


    👩‍🍳 Step-by-Step Instructions


    🥩 Step 1: Marinate the Steak

    1. Pat steak cubes dry with paper towels.

    2. In a bowl, combine olive oil, garlic, salt, pepper, paprika, chili flakes, Worcestershire, and soy sauce.

    3. Toss steak cubes in marinade.

    4. Cover and refrigerate for 30–60 minutes (or up to 4 hours for deeper flavor).


    🔥 Step 2: Cook the Steak

    Option A – Grill (Best Flavor)

    1. Preheat grill to high heat (450–500°F / 230–260°C).

    2. Thread steak onto skewers or use a grill basket.

    3. Grill 2–3 minutes per side for medium-rare.

    4. Remove and rest 5 minutes.

    Option B – Cast Iron Skillet

    1. Heat skillet over high until very hot.

    2. Add 1 tbsp oil.

    3. Sear steak in batches (do NOT overcrowd).

    4. Cook 2–3 minutes per side until browned and caramelized.

    👉 Internal temperature guide:

    • 130°F (54°C) – Medium rare

    • 140°F (60°C) – Medium


    🧄 Step 3: Make the Creamy Garlic Pepper Sauce

    1. In a saucepan over medium heat, melt butter.

    2. Add garlic and sauté 30 seconds (don’t brown).

    3. Pour in beef broth and simmer 2–3 minutes.

    4. Add heavy cream, Dijon, pepper, and salt.

    5. Simmer 5–7 minutes until slightly thickened.

    6. Stir in Parmesan until melted.

    7. Add lemon juice at the end.

    8. Adjust salt and pepper to taste.

    💡 Sauce should coat the back of a spoon.


    🍽️ Step 4: Assemble

    • Arrange steak bites in a serving bowl.

    • Drizzle some sauce over top.

    • Sprinkle fresh parsley.

    • Serve remaining sauce in a dipping bowl.
