    🍠 Crispy Smashed Sweet Potatoes with Whipped Feta & Hot Honey

    ⭐ Ingredients (Serves 4)

    Sweet Potatoes:

    • 2 lbs small-to-medium sweet potatoes
    • 1–2 tbsp olive oil
    • Salt & black pepper
    • 1 tsp garlic powder
    • 1 tsp smoked paprika (optional but great)

    Whipped Feta:

    • 1 cup feta cheese (crumbled)
    • ½ cup plain Greek yogurt
    • 1–2 tbsp lemon juice
    • 1 tbsp olive oil
    • 1 small garlic clove

    Hot Honey:

    • ¼ cup honey
    • ½–1 tsp red pepper flakes (adjust heat)
    • Optional: dash of hot sauce or chili paste

    Optional toppings:

    • Fresh herbs (parsley, thyme)
    • Crushed nuts (walnuts or pistachios)

    🔪 Instructions

    1. Boil the sweet potatoes

    • Add whole sweet potatoes to salted water
    • Boil 15–20 minutes until fork-tender
    • Drain and let them dry slightly (this helps crisping)

    2. Smash & season

    • Preheat oven to 425°F (220°C)
    • Place potatoes on a lined baking sheet
    • Gently smash each with a glass or fork
    • Brush with olive oil and sprinkle salt, pepper, garlic powder, paprika

    3. Roast until crispy

    • Roast 25–30 minutes
    • Flip halfway for extra crisp edges

    4. Make whipped feta

    Blend until smooth:

    • Top with crispy smashed sweet potatoes
    • Drizzle hot honey
    • Finish with herbs or nuts
