Ingredients
For the Sweet Potato Bake
- 2 large sweet potatoes, peeled and cubed
- 1 can (15 oz / 425 g) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp chili powder
- ¾ tsp salt
- ¼ tsp black pepper
For the Whipped Feta
- 200 g block feta cheese
- ½ cup Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 small garlic clove
- Black pepper to taste
For the Hot Honey
- ¼ cup honey
- 1–2 tsp hot sauce
- ½ tsp chili flakes
- 1 tsp apple cider vinegar
- Pinch of salt
For Finishing
- Fresh parsley or cilantro
- Toasted sesame seeds or pumpkin seeds
- Lemon wedges
- Optional: sliced avocado or pickled onions
Instructions
1. Roast the Sweet Potatoes & Chickpeas
- Preheat oven to 425°F (220°C).
- Line a large baking tray or casserole dish with parchment paper.
- Pat chickpeas very dry using paper towels.
- In a large bowl combine:
- sweet potatoes
- chickpeas
- olive oil
- smoked paprika
- cumin
- garlic powder
- onion powder
- chili powder
- salt
- black pepper
- Toss until evenly coated.
- Spread onto the tray in a single layer.
Bake for 35–40 minutes, stirring halfway through, until:
- sweet potatoes are caramelized
- chickpeas are crispy
- edges are golden brown
2. Make the Whipped Feta
While the bake cooks:
- Add to a food processor:
- feta
- Greek yogurt
- olive oil
- lemon juice
- garlic
- Blend until smooth and fluffy.
- Add 1–2 tbsp water if needed for a creamier texture.
- Season with black pepper.
Chill until ready to serve.
3. Prepare the Hot Honey
In a small saucepan over low heat:
- Warm honey gently for 1–2 minutes.
- Stir in:
- hot sauce
- chili flakes
- apple cider vinegar
- pinch of salt
- Simmer for 30 seconds.
- Remove from heat.
Assemble & Serve
Option 1: Family-Style Bake
- Spread whipped feta onto a serving platter or shallow bowl.
- Spoon roasted sweet potatoes and crispy chickpeas over the top.
- Drizzle generously with hot honey.
- Finish with herbs, seeds, and lemon juice.
