    Crispy Chickpea & Sweet Potato Bake with Whipped Feta & Hot Honey

    Crispy Chickpea & Sweet Potato Bake with Whipped Feta & Hot Honey

    A cozy sheet-pan style bake with caramelized sweet potatoes, crunchy spiced chickpeas, creamy whipped feta, and a sticky hot honey drizzle. Balanced, satisfying, and packed with texture.

    Ingredients

    For the Sweet Potato Bake

    • 2 large sweet potatoes, peeled and cubed
    • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
    • 2 tbsp olive oil
    • 1 tsp smoked paprika
    • 1 tsp ground cumin
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • ½ tsp chili powder
    • ¾ tsp salt
    • ¼ tsp black pepper

    For the Whipped Feta

    • 200 g block feta cheese
    • ½ cup Greek yogurt
    • 1 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 small garlic clove
    • Black pepper to taste

    For the Hot Honey

    • ¼ cup honey
    • 1–2 tsp hot sauce
    • ½ tsp chili flakes
    • 1 tsp apple cider vinegar
    • Pinch of salt

    For Finishing

    • Fresh parsley or cilantro
    • Toasted sesame seeds or pumpkin seeds
    • Lemon wedges
    • Optional: sliced avocado or pickled onions

    Instructions

    1. Roast the Sweet Potatoes & Chickpeas

    1. Preheat oven to 425°F (220°C).
    2. Line a large baking tray or casserole dish with parchment paper.
    3. Pat chickpeas very dry using paper towels.
    4. In a large bowl combine:
      • sweet potatoes
      • chickpeas
      • olive oil
      • smoked paprika
      • cumin
      • garlic powder
      • onion powder
      • chili powder
      • salt
      • black pepper
    5. Toss until evenly coated.
    6. Spread onto the tray in a single layer.

    Bake for 35–40 minutes, stirring halfway through, until:

    • sweet potatoes are caramelized
    • chickpeas are crispy
    • edges are golden brown

    2. Make the Whipped Feta

    While the bake cooks:

    1. Add to a food processor:
      • feta
      • Greek yogurt
      • olive oil
      • lemon juice
      • garlic
    2. Blend until smooth and fluffy.
    3. Add 1–2 tbsp water if needed for a creamier texture.
    4. Season with black pepper.

    Chill until ready to serve.


    3. Prepare the Hot Honey

    In a small saucepan over low heat:

    1. Warm honey gently for 1–2 minutes.
    2. Stir in:
      • hot sauce
      • chili flakes
      • apple cider vinegar
      • pinch of salt
    3. Simmer for 30 seconds.
    4. Remove from heat.

    Assemble & Serve

    Option 1: Family-Style Bake

    1. Spread whipped feta onto a serving platter or shallow bowl.
    2. Spoon roasted sweet potatoes and crispy chickpeas over the top.
    3. Drizzle generously with hot honey.
    4. Finish with herbs, seeds, and lemon juice.

    Option 2: Individual Bowls

    Serve over:

    • quinoa
    • rice
    • couscous
    • greens

    Then top with feta and hot honey.
