Crispy Roasted Brussels Sprouts (Restaurant-Style)

Ingredients (Serves 4)

  • 1½ lbs (700 g) fresh Brussels sprouts

  • 3 tablespoons olive oil

  • ¾ teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

  • 3 cloves garlic, minced

  • 1 tablespoon balsamic vinegar (optional but recommended)

  • ¼ teaspoon red pepper flakes (optional)

Optional Add-Ins (Highly Recommended)

  • 3 slices thick-cut bacon, chopped

  • ¼ cup freshly grated Parmesan

  • 1 teaspoon honey or maple syrup

  • Zest of ½ lemon


Step 1: Prep the Brussels Sprouts

  1. Preheat oven to 425°F (220°C).

  2. Trim off the tough stem ends.

  3. Remove any yellow or damaged outer leaves.

  4. Cut each sprout in half lengthwise (large ones can be quartered).

👉 Cutting them exposes the flat side, which helps them caramelize beautifully.


Step 2: Season

  1. Place sprouts in a large bowl.

  2. Drizzle with olive oil.

  3. Add salt, pepper, and garlic.

  4. Toss until evenly coated.

If using bacon, mix it in now.


Step 3: Arrange for Maximum Crispiness

  • Line a baking sheet with parchment paper.

  • Spread sprouts in a single layer.

  • Place them cut-side down for better browning.

  • Don’t overcrowd — use two pans if necessary.


Step 4: Roast

  • Roast for 20–25 minutes.

  • At 15 minutes, check for browning.

  • They’re done when:

    • Deep golden brown on the bottom

    • Edges are crispy

    • Fork slides easily into center


Step 5: Finish & Elevate

Immediately after removing from oven:

  • Drizzle with balsamic vinegar

  • Add honey or maple syrup (for balance)

  • Sprinkle Parmesan

  • Add lemon zest

Toss gently and serve hot.

  • Don’t rinse right before roasting (moisture prevents crisping).

  • High heat is key — 425°F minimum.

  • A heavy, dark sheet pan browns better.
