    🍠 Roasted Sweet Potatoes Stuffed with Creamy Avocado, Spinach, Mushroom & Feta Mix

    📝 Ingredients

    For the sweet potatoes:

    • 3–4 medium sweet potatoes
    • 2 tbsp olive oil
    • Salt & black pepper (to taste)

    For the filling:

    • 1 tbsp olive oil
    • 2 cups mushrooms (sliced)
    • 2 cups fresh spinach
    • 2 cloves garlic (minced)
    • 1 ripe avocado (mashed)
    • ½ cup feta cheese (crumbled)
    • 1 tbsp lemon juice
    • ½ tsp chili flakes (optional)
    • Salt & pepper (to taste)

    Optional toppings:

    • Fresh parsley or cilantro
    • Toasted nuts or seeds (walnuts, pumpkin seeds)
    • Drizzle of yogurt or tahini

    👩‍🍳 Instructions

    1. Roast the sweet potatoes

    • Preheat oven to 200°C (400°F)
    • Wash and pierce sweet potatoes with a fork
    • Rub with olive oil, sprinkle salt
    • Roast for 40–50 minutes until soft inside

    2. Prepare the filling

    • Heat olive oil in a pan
    • Sauté garlic and mushrooms until golden (5–6 minutes)
    • Add spinach and cook until wilted
    • Season with salt, pepper, chili flakes

    3. Make it creamy

    • Remove from heat
    • Mix in mashed avocado and lemon juice
    • Gently fold in feta cheese

    4. Assemble

    • Slice open roasted sweet potatoes
    • Fluff the inside slightly with a fork
    • Spoon the creamy spinach-mushroom filling on top

    5. Garnish & serve

    • Add herbs, nuts, or yogurt drizzle if desired
    • Serve warm and enjoy 😍
